CAAL Members toured the private underground cheese-curing caves at Murray's Cheese Shop in New York City with an affineur (or cheese ager), who cares for hundreds of cheese wheels, turning and washing them regularly to distribute the butterfat and improve flavor while they ripen. They tested out their new appreciation for fromage at a tasting, where they also drank paired Portuguese wines, courtesy of Palm Bay Imports. Murray's Cheese Caves are climate-controlled walk-in refrigerators designed by France’s leading affineur, Hervé Mons. The Caves are one of New York's best-kept secrets: Conde Nast Traveler listed Murray's Cheese Caves as one of fifty places on their "Dream List: Experiences Only an Insider Can Deliver," and New York Daily News named the Caves one of "New York's 10 Coolest Spots." Tours of the Caves always sell out well in advance during the annual Open House New York. |
